Single-origin beans dialled in against the morning's humidity, then again at midday. Espresso at the counter, a four-minute pour-over if you have the time, or twenty-four-hour cold brew if you don't.

Ethiopian Yirgacheffe dripped slowly for twenty-four hours. Floral, citrus-bright, served over clear ice.
For the table
Salmon cured in house for a day, sourdough, poached eggs, saffron hollandaise and black caviar.
To finish
Eight paper-thin caramelised honey layers with sour-cream mousse and golden crumble. Half the neighbourhood comes for this.
